Having recently explored various hoppy pale ales for The Brew Club (India Pale Ales, American Pale Ales, Pacific Pale Ales, Dark India Pale Ales!) I have become increasingly aware of the complex flavours that various varieties of hop imbue to a brew.
Doing a bit of research about hops I stumbled a fascinating post from Kelly Ryan’s excellent blog.
Kelly used to work at the Thornbridge Brewery, and has recently moved to New Zealand, his blog makes fascinating reading, but I particularly recommend the hop posting.
While the post is few years old now – and newer hop varieties are coming onstream (such as Sauvin- coincidentally from New Zealand) – it would be all too easy to plagiarise this article, but I would rather post a link to it here.
